So we’ve fallen off the blog posting, there should be a few dinners popping up here in the next few days….

My (FreeFoodBaby) last creation was inspired by what was on sale at the grocery store. It was so long ago I’m not sure when it happened but I’m guessing 25th of January ish. We’ve had to move dates around etc, to ensure as many of us as possible can attend.Who knew how hard it could be to get 4 people in the same place at the same time.

Menu: Pan fried pork chops; Sauteed onions, mushrooms and peppers; green beans still crisp; special steamed rice. Also homemade lemonade.

Butter makes everything better

For our vegetarian option I made TokenBoy bring his own protein. He warmed a can of black beans and added a special mexi-spice mix that looked pretty tasty.

Secret Ingredient for my dinner: BUTTER

The pork chops were simply fried in a little bit of oil, with salt and fresh ground pepper.

Onions and mushrooms were thrown in a pan with about 2 tablespoons of butter and 3 turns of fresh ground pepper, once the onions started to caramelize I threw in the pepper to warm up.

The green beans were boiled for maybe 5 minutes and then drained with a cold water rinse to stop them from cooking further. Then tossed back in the warm pot with 1 tablespoon of butter for flavour.

The rice actually took a bit of preparation, I fried about 1/2 an onion in butter and added the uncooked rice, stirred until the rice browned a bit and then threw the whole lot in my rice cooker. I added 3/4 cup chicken stock (not really chicken in honour of our vegetarian but chicken flavoured) and then 1 and 1/4 cups of water then flicked the switch.

Lemonade, 4 fresh squeezed sweet lemons; 1/2 cup simple syrup (mine was citrus infused); carbonated water for fanciness. Mix all together, taste, add more simple syrup if needed. I added slices of lemon to make pouring more difficult.

Simple and colourful and tasty.
